Bell Pepper Sandwich

If you’re looking for a delicious and easy picnic sandwich, look no further than the bell pepper sandwich!


– 1 medium bell pepper (green or red) – 3 tbsp cream cheese – 1 ½ oz thinly sliced swiss cheese – 2 oz thinly sliced ham – ½ small cucumber – Few slices of avocado – 1 tsp whole grain mustard – Salt to taste – Black pepper to taste


Wash the bell pepper and place it on a cutting board. Cut the stem of the bell pepper and cut the pepper in half lengthwise. Get rid of the ribs and seeds. Cut the cucumber and the avocado on small slices as well and set them aside for later. .


Spread cream cheese on both of the pepper halves using a spoon to help you in this process and add the mustard on top of it


Now it’s time to put the ham, cheese, and previously cut cucumber and avocado on each half. You may want to fold on half the ham and the cheese if the slices are too big

After you have layered both of the pepper halves, add salt and black pepper to taste on top. Put the pepper halves on top of each other to form a sandwich.
