With its combination of crunchy cauliflower, creamy cheese, and a hint of herbs, the Cauliflower Cheese Sandwich is sure to become a favorite.
Ingredients – 1 head cauliflower – 1 cup parmesan cheese (½ cup shredded and ½ cup chopped) – 1 egg – 1 teaspoon Italian herb seasoning – 4 slices Cheddar cheese – Salt and black pepper to taste
Boil the cauliflower for a couple of minutes in salted water until it gets soft. Drain the water, let it cool and cut it into small florets. Put the florets into the food processor and pulse into small crumbs. Transfer the cauliflower crumbs into a large microwave-safe bowl and microwave for 3 minutes. Remove and stir.
In the same bowl add the parmesan, egg and seasonings into the cauliflower and mix it well until everything is combined and you have a smooth paste. Divide the mixture into 8 portions and transfer to a baking sheet in a previously prepared baking pan. Shape each piece into a square slice about ½ inch thick.
Bake in a preheated oven to 450°F (230°C) for 15 to 18 minutes or until golden brown. Let them cool and assemble the sandwiches. Put one cauliflower slice, add the cheddar on top and add the second slice. Broil the sandwiches in the oven for 5 to 10 minutes if you want completely melted cheddar.
