Whether you’re packing it for a picnic or making it for lunch, this chicken sandwich is sure to satisfy.
– 2 tbsp olive oil – 1 lb chicken tenderloin – 3.2 oz (½ cup) spreadable cream cheese – 3 oz (½ cup) crumbled blue cheese – 1 red apple (diced) – 2 oz (½ cup) toasted walnuts (chopped or whole) – 1 tbsp lemon juice – 4 slices rye bread ( you can toast it if you like) – ½ tsp tarragon
Pour olive oil in a medium sized pan and cook the chicken on medium heat. Cook on both sides for about 15 minutes until golden.
IToast the walnuts in the oven or in a pan and chop them. You can also cut the apple and set it aside. Place the bread in a toast press and leave it for a few minutes until it’s nice and brown.
In a bowl mix together the cream cheese, blue cheese, apples, walnuts and the lemon juice. Stir them together and spread on a slice of bread.
When the chicken is cool, cut it and top the sandwich with it. Sprinkle some tarragon on top.
