The Chicken Caprese Panini is the perfect combination of flavors and textures that will make your taste buds sing.
– ½ cup olive oil – ¼ cup fresh basil – A few garlic cloves – ½ tsp red pepper Flakes – ½ tsp salt – ½ tsp black pepper – 4 Chicken tenderloins – ½ cup balsamic vinegar – 8 slices of your favorite bread – 2 Tomatoes – 8 slices mozzarella
Place all the ingredients for the basil oil in a hand blender and process until everything gets nice and smooth.
Place the meat in a bowl, cover it with basil oil and leave it in a fridge to marinate for 30 minutes. Take the chicken meat out of the fridge and cook each piece for a few minutes on a previously heated panini press. The meat is done when it has grill marks over it and has some brown color.
Heat the balsamic vinegar and cook for a few minutes until it starts to get thicker.
Place a slice of bread, add the cooked chicken meat, tomato, and mozzarella. Brush the top and the bottom of the sandwich with the basil oil, place it in a preheated panini press. Drizzle on top with the previously prepared balsamic vinegar.
