Chicken Salad Sandwich

Ingredients

For the salad: – 3 chicken breasts – 6 slices lemon (more or less by taste) – A few sprigs dill + 1 tbsp chopped – 1 green apple – 1/2 red onion – 2 celery stalks For the dressing: – 5.3 oz (2/3 cup) mayonnaise – 2 oz (1/4 cup) Dijon mustard – 2 tbsp red wine vinegar – kosher salt – freshly ground black pepper For the sandwich: – Chicken salad – Baguette (or your favorite bread) – lettuce, for serving

Make the salad: Place the chicken in a medium pot and cover it with water. Add the lemon and dill in the pot and cook the meat for around 10 minutes on a medium heat. Take the pot out of the heat and leave the meat side to chill. When the meat is cold enough to touch it with your hands, place it on a chopping board and cut it into small cubes. You can also cut the apple, onion and celery. Place all these ingredients in a big bowl and pour over the dressing and stir with a spoon until everything is covered with the dressing.

Make the dressing: In a medium bowl, whisk together the mayonnaise, Dijon mustard and vinegar and season with salt, pepper and 1 tbsp chopped dill.

Assemble the sandwich: Cut the baguette bread into the wanted sized pieces. Cut every piece in half. Lay a lettuce leaf on the bottom part of the bread, add a spoon or two of the chicken salad you’ve already made and top it with the other piece of the bread assembling if needed.
