The Coleslaw Swiss Cheese melt is a great way to enjoy a picnic without having to worry about packing a lot of ingredients.
For the Coleslaw Salad: – 1/2 head green cabbage – 1/2 head red cabbage – 1 carrot (or 1 cup shredded) – ½ cup mayonnaise – 2 tbsp apple cider vinegar – 2 tbsp maple syrup – ½ tsp dried dill – ½ tsp chili powder – 1 tsp kosher salt – Pinch of black pepper For the Sandwiches: – 2 cups Coleslaw Salad – ¼ cup Russian Dressing – 4 slices Swiss cheese – 4 pretzel rolls
Make the coleslaw: Mix in a small bowl, the mayonnaise, apple cider vinegar, maple syrup, dill, chili powder, and salt and pepper. Place your chopping board and prepare the green and red cabbage and the carrot. Add them all together in a big bowl and pour the dressing over. Stir with a spoon until all the ingredients are mixed and the salad is coated with the dressing and refrigerate for later.

For the Russian Dressing: Chop shallots and dill pickles into small cubes and place them into a bowl. In the same bowl add the mayonnaise and the ketchup. You can also add some hot sauce if desired. Stir until this dressing is combined and leave it aside for later.

Assemble The Melt: Cut the pretzel buns in half and place the bottoms of the pretzel buns on a baking sheet. Add a slice of Swiss cheese on top. Place them in the oven and bake at 400°F (200°C) for about 4 to 5 minutes until the cheese is melted and the buns are lightly toasted. On each piece add a spoon or two of the Coleslaw Salad and from the Russian dressing. Place on top the other half of the pretzel buns.
