Cucumber Sandwiches

Whether you’re looking for a light lunch or a snack to take on a picnic, Cucumber Sandwiches are the perfect choice.


– 1 cucumber – 1 green onion – 8 oz ( 1cup ) cream cheese – 2 oz ( ¼ cup ) mayonnaise – 1 tsp fresh chives – 1 tbsp parsley – ½ tsp garlic (minced or powder) – Pinch of salt and pepper – 1 tsp grated lemon zest – 1 tsp lemon juice – 1 loaf sliced bread


Clean the cucumber and chop it into small circles. Chop the green onion as well, together with the chives and the parsley. Place them aside for later. Take a big bowl mix the cream cheese, mayonnaise, previously chopped onion, garlic, fresh chives, parsley, lemon zest, lemon juice and salt and pepper according to your taste and desire.


Take a slice of bread and cut a circle using a mold to help you in this process. Repeat the same procedure for all the bread slices. Place aside the crusts, you can use them in another recipe.


In one circle of bread, place the 1 or 2 tbsp of the cream cheese mixture using the spoon to help you spread the mixture, then top with cucumber slice. Repeat the process for the other bread circles.

The crunchier the cucumber, the better the sandwich will be.
