For Parsley Vinaigrette: – Juice of ½ lemon – 1 cup chopped parsley – 1 tbsp honey – 2oz (1/4 cup) sunflower oil For the filling: – 15 oz. (1 can) tuna – 1/2 cup chopped fennel – 1/2 Granny Smith apple – 1/3 cup mayonnaise – 1 tbsp parsley vinaigrette – 1 tbsp lemon juice – 1 ½ tsp fennel seeds – 1 tsp coriander – 1 tsp lemon zest – 1/2 tsp sea salt Gar – Pinch cayenne For the sandwich: – 6 hot dog buns – 6 lettuce leaves
Make Parsley Vinaigrette: With a hand blender, blend together lemon juice, oil, honey, parsley until everything is well combined.
Make the filling: In a medium bowl combine together tuna, fennel, apple, mayonnaise, parsley vinaigrette, lemon juice, fennel seeds, coriander, zest, and salt. Mix well to combine all ingredients.
Make the sandwich: Line each hot dog bun with a lettuce leaf. Spoon 1/2 cup tuna salad onto each sandwich (or more if you want).
