This unique Greek Grilled Cheese Sandwich is the perfect picnic sandwich for any occasion.
Ingredients – 8 tbsp butter – 8 slices sourdough bread – 3 cups mozzarella – 1 cup feta cheese – 4 roasted red peppers – ½ cup kalamata olives – 2 tbsp dill
First prepare the ingredients because you are going to layer the sandwich in the pan, and the bread can easily burn so you need to be fast. Place your chopping board and cut the roasted peppers in small pieces. Cut the pitted olives in small pieces as well. Shred the mozzarella if you haven't already bought a shredded bag. Chop the dill and crumble the feta cheese.
Butter all the bread slices on the top side. Place your pan on a medium heat and put one bread slice in the pan with the buttered side down. Add mozzarella, peppers, feta cheese, the olives and the dill and place another slice of bread on top of the sandwich with the buttered side up.
Cook the sandwich for a minute or two until the bread gets brown and crispy and flip it on the other side. Cook for a minute or two and the sandwich is ready to be served. Repeat the same process for the rest of the sandwiches.
