The Hasselback Tomato Club is a twist on the classic club sandwich, with a few extra ingredients to make it even more delicious!
– 4 plum tomatoes – 2 slices Swiss cheese – 4 slices bacon halved – 4 slices deli turkey – 4 slices lettuce – ½ medium avocado peeled and cut into 8 slices – Black pepper to taste
Cook the bacon until golden and crispy. Leave it to cool, cut it in half and leave it for later. You can also cut the avocado into small slices so everything will be ready
Clean the tomatoes and cut them crosswise, but don’t go all the way through. The number of cuts depends on how big the tomato is. To make it easier to make the cuts, use two big chopsticks and place it on the work surface on both sides of the tomato. They will prevent you from going all the way through.
When the cuts are done, start filling them with the toppings. Place one piece of each cheese, bacon, deli turkey, lettuce, avocado in a different cut in the tomato. Sprinkle some black pepper on top to taste.
Serve the Hasselback Tomato Club with a side of chips or a salad for a complete picnic meal!
