Chicken Avocado Rolls

– 1 chicken breast – 1/2 red onion – 1 tbsp fresh parsley – 2 tbsp green onion – 1 avocado – 1 red bell pepper – 3/4 cup shredded cheese – 3 tbsp plain yogurt – 1 1/2 tsp lime juice – 1/2 tsp garlic powder – pinch of salt – pinch of pepper – 4 flour tortillas

Cook the chicken and place it on a cutting board and shred it using a fork or your hands and place it in a big bowl.

Then chop the red onion, green onion, red bell pepper and fresh parsley. Peel the avocado and mash it with a fork. Set it aside. In the bowl with the chicken add the shredded cheese, mashed avocado, red onion, green onion, red bell pepper, fresh parsley, yogurt, lime juice, garlic powder, pinch of salt and pepper. Stir until evenly combined.

Place the tortilla on the working board. Spread a thin layer of the chicken mixture onto a tortilla leaving a small border around the edges. Roll up the tortilla and cut into slices about 1″ thick with a sharp knife. Repeat with remaining tortillas and chill before you serve.
