Simple and fun to make, this Pineapple Coleslaw is a great picnic side dish with a robust flavor perfect for a sunny day.
– 3 cups cabbage – 1/2 cup green onions – 2-3 tbsp chopped fresh cilantro – 1 1/2 cups canned pineapple tidbits – 1 jalapeno Dressing: – 1/4 cup plain yogurt – 1 tbsp apple cider vinegar – 3 tbsp pineapple juice – 1-2 tbsp brown sugar – pinch of salt – pinch of pepper
On the cutting board, cut the cabbage using a sharp knife. Also chop the green onion and fresh cilantro.
Place them in a big bowl and add the pineapple as well. Mix the ingredients together.
Make The Dressing: In a small bowl, whisk together yogurt, vinegar, pineapple juice, brown sugar, salt and pepper. Mix until everything is well combined and pour the mixture over the salad. Mix again and serve.
