Making your own roasted red pepper hummus is a great way to enjoy a delicious snack without having to buy it from the store.
This is 100% the best picnic ever!
Ingredients 1 red bell pepper 4 garlic cloves 2 cans 15 oz of chickpeas 2 tbsp olive oil 2 tbsp chipotle sauce 1 tsp ground cumin 3 tbsp lemon juice 1 tsp salt
Chop the red bell pepper in half and place in the prepared baking tray lined with parchment paper. Into the same tray, also add the garlic cloves with their peel.
Roast them in the preheated oven at 375°F (190°C) for about 10 minutes or until tender. Let them cool and gently peel off the skin.
In a food processor or blender add chickpeas, roasted peppers and garlic, olive oil, chipotle sauce, lemon juice, cumin and salt. Process a few minutes until smooth and creamy.
