Tofu Bahn Mi Sandwich

The Tofu Bahn Mi Sandwich is a fantastic alternative sandwich is a delicious and healthy twist on the classic bahn mi.

Ingredients

– 14 oz Tofu Pickled vegetables: – 1 carrot – 1 daikon – ½ red onion – 1 cup rice wine vinegar – 3 tbsp maple syrup – 2 tsp kosher salt Hot mayonnaise: – ¼ cup vegan mayonnaise – 1 tbsp sriracha (any other hot sauce will work) Marinade: – ¼ cup soy sauce – 2 tbsp sesame oil – 2 tbsp Maple syrup – 3 garlic cloves – Lemongrass by taste – 2 tbsp shredded fresh ginger – ⅓ cup fresh cilantro – Kosher salt and black pepper to taste Sandwich: – 1 baguette – 1 cup fresh basil leaves – 1 cup fresh cilantro leaves – 1 Cucumber – Hot sauce – Pickled vegetables – Prepared tofu – 1 hot pepper (jalapeños if available)

Make the pickled vegetables: Cut the carrot, daikon and onion into thin long stripes and place them into a bowl. In the same bowl add the rice wine vinegar, maple syrup and kosher salt. Stir everything with a spoon and leave them aside while you are preparing the rest of the sandwich so the vegetables can absorb as much liquid as possible. Make the hot mayonnaise: Combine the mayo and the sriracha in a bowl and stir until they are well combined. Set it aside for later. Make the marinade: In a hand blender add the soy sauce, sesame oil, maple syrup, garlic, lemongrass, ginger, cilantro, kosher salt and black pepper and process until everything is well combined.

Prepare the tofu: Drain the tofu wrapping it with a kitchen towel, place something heavy on top of it to help you drain the liquids. Place it in a bowl and pour the marinade inside the tofu. Heat a small amount of oil in a pan over medium heat and place the tofu there. Make sure not to pour the marinade sauce in the pan as well. Fry the tofu until it gets a nice brown color and place it back in the previous bowl with the marinade.

Make the sandwich: Take the baguette bread and cut it into 4 parts. Split 1 part horizontally and start layering the sandwich. First spread a layer from the hot mayonnaise. Then add a tofu layer, some fresh cilantro and basil leaves, add a layer of the pickled vegetables, cucumber, hot pepper slices and top with the second part of the bread.
