– 8 slices bacon – 1/4 cup mayonnaise – 1 tsp lemon juice – Pinch of garlic powder – 6 slices bread (toasted if you prefer) – 10 slices turkey – 1 to 2 cups spinach – 1 to 2 tomatoes, cut in circles – 1 avocado, thinly slices
Place the bacon on a baking sheet and bake in the oven at 400°F (205°C) for about 7-10 minutes. In a small bowl combine together the mayonnaise, lemon juice, and garlic powder. Mix with a spoon until everything is incorporated and leave this sauce aside for later.
IOn the serving plate place one piece of toasted bread. Add 2 slices of turkey, top with a fresh spinach, 2 slices of tomato, and 2 slices of bacon.
Layer another slice of toast on top. Place 3 more slices of turkey, 4 slices of fresh avocado, and 2 more pieces of bacon. Spread the mayonnaise mixture onto the last slice of toast. Place the toast mayonnaise-side down on top of the sandwich.
Remember you can always add more or less of some of the ingredients depending on your taste. Cut the sandwiches into 4 triangles and secure each piece with a toothpick.
