Ingredients

– 3 pounds watermelon – 2 tbsp lemon juice – 2 tbsp lemon zest – ¼ cup fresh mint leaves  – 3 tbsp olive oil or more if needed – 4 oz arugula – Kosher salt to taste – Black pepper to taste – 4 oz feta cheese

Step 1

Remove the rind of the watermelon and cut the watermelon into cubes. It’s best if the watermelon is seedless, but if you can’t find one, a regular one will do the job.

Cut the mint and the arugula into small pieces. In a big bowl mix together watermelon cubes, half of the lemon zest, and lemon juice.

Add oil, mint and arugula and toss to combine. Season with salt and pepper to taste. Transfer the salad to a wide shallow bowl.

Step 4

Crumble feta on top of it and add the rest of the lemon zest. Add olive oil and black pepper to taste!
