– 1 pound feta cheese – 1/4 pound cream cheese – 2 tbsp heavy cream – 1/4 cup (2 fl oz) olive oil – 2 tbsp lemon juice – 2 cucumbers (1 1/2 pounds) – 1 tsp dried oregano or 1 tbsp fresh oregano – pinch of salt – pinch of ground black pepper For serving: – Pita bread or baguette slices
In a large bowl place the feta cheese and pour the water over it. Тhe water should cover the feta cheese. Let it rest at room temperature for about 30 minutes. Then drain and cut it into medium pieces on the plate. Place the feta cheese in the food processor or blender and process until creamy. Add the cream cheese, heavy cream, half of the olive oil and half of the lemon juice. Process until all ingredients are well combined. Refrigerate for about 1 hour.
On the cutting board cut off the edges of the cucumbers. Тhen cut them in half and scoop out the seeds with a spoon. Cut the cucumbers into small cubes.
Place the cucumber cubes in a medium bowl and add the rest of the olive oil and lemon juice. Add dried oregano, salt and pepper. Cover with plastic wrap and refrigerate for 1 hour. When the cheese mixture is ready, pour in a bowl and serve with the cucumbers and pita bread or baguette slices.
