Wilted spinach is a simple and easy way to add a healthy dose of greens to your picnic!
– 4 strips of bacon – 8 oz whole baby spinach – ¼ red onion chopped – 2 tsp of all purpose flour – 2 tbsp sugar – ¼ tsp salt – 2.6 oz ⅓ cup of balsamic or apple vinegar – Black pepper to taste – ½ sliced orange – grated orange peel – walnut
After washing the baby spinach leaves, nicely set them aside on a towel so they can dry. Then you turn on your stove on high heat and fry the bacon until crispy. When you’re done with frying, use the grease from the bacon by adding in the flour and sugar, you should let them simmer down, enough for the ingredients to combine and the sugar to melt.
Cut the onion on small cubes and the bacon on small pieces. After you add the baby spinach in a bowl, add a layer of chopped red onion and some vinegar. On top finish with small pieces of crispy bacon. Season with salt and pepper to taste.

As garnish you can use orange slices, grated orange peel, walnuts or something by your choice.
