Ingredients
  

  • 3 pounds watermelon
  • 2 tbsp lemon juice
  • 2 tbsp lemon zest
  • ¼ cup fresh mint leaves chopped
  • 3 tbsp olive oil or more if needed
  • 4 oz arugula chopped
  • Kosher salt to taste
  • Black pepper to taste
  • 4 oz feta cheese

Instructions
 

  • Remove the rind of the watermelon and cut the watermelon into cubes. It’s best if the watermelon is seedless, but if you can’t find one, a regular one will do the job.
    3 pounds watermelon
  • Cut the mint and the arugula into small pieces.
    ¼ cup fresh mint leaves, 4 oz arugula
  • In a big bowl mix together watermelon cubes, half of the lemon zest, and lemon juice.
    2 tbsp lemon juice, 2 tbsp lemon zest
  • Add oil, mint and arugula and toss to combine. Season with salt and pepper to taste.
    3 tbsp olive oil or more if needed, Black pepper to taste, Kosher salt to taste
  • Transfer the salad to a wide shallow bowl.
  • Crumble feta on top of it and add the rest of the lemon zest. Add olive oil and black pepper to taste.
    4 oz feta cheese
