Pineapple Coleslaw

Ingredients
  

  • 3 cups cabbage
  • 1/2 cup green onions
  • 2-3 tbsp chopped fresh cilantro
  • 1 1/2 cups canned pineapple tidbits
  • 1 jalapeno seeded and chopped (optional)

Dressing:

  • 1/4 cup plain yogurt
  • 1 tbsp apple cider vinegar
  • 3 tbsp pineapple juice from the canned pineapple
  • 1-2 tbsp brown sugar
  • pinch of salt
  • pinch of pepper

Instructions
 

  • On the cutting board, cut the cabbage using a sharp knife. Also chop the green onion and fresh cilantro. Place them in a big bowl and add the pineapple as well. Mix the ingredients together.
    3 cups cabbage, 1/2 cup green onions, 2-3 tbsp chopped fresh cilantro, 1 1/2 cups canned pineapple tidbits, 1 jalapeno

Make the dressing:

  • In a small bowl, whisk together yogurt, vinegar, pineapple juice, brown sugar, salt and pepper. Mix until everything is well combined and pour the mixture over the salad. Mix again and serve.
