Potato Salad

Potato salad is a great side dish for picnics and barbecues. It can also be served as a side dish for lunch or dinner.

Ingredients
  

  • 6 Potatoes
  • Water for the potatoes and eggs as needed
  • 4-5 sweet pickles
  • 2 stalks celery
  • 4 eggs
  • 1 smaller onion
  • 1 cup salad dressing or mayonnaise
  • 1 tsp mustard
  • 1 tsp pickle juice
  • Salt and black pepper to taste
  • 1 tsp paprika

Instructions
 

  • Place a pot with water on a medium heat. Wash the potatoes, peel them and cut them into small cubes. The water should be boiling so far so add the potatoes in the water and let them cook for around 30 minutes or until they get soft. At the same time you can boil the eggs for a few minutes.

  • Meanwhile you can chop the sweet pickles, celery, onion and previously boiled eggs. Place all chopped ingredients in a big bowl and the potatoes should be done by now. Drain the water of the potatoes and place them in the bowl with the rest of the ingredients. Stir the salad a few times.
    4-5 sweet pickles, 2 stalks celery, 1 smaller onion
  • In the same bowl add the salad dressing, mustard, pickle juice, salt, black pepper and paprika. Stir again all the ingredients are incorporated. Taste before you serve in case you need to add some more seasonings. Serve in a bowl decorated with fresh parsley.
