After washing the baby spinach leaves, nicely set them aside on a towel so they can dry.

When you’re done with frying, use the grease from the bacon by adding in the flour and sugar, you should let them simmer down, enough for the ingredients to combine and the sugar to melt.

If the dressing is too thick you may need to add some water.
Cut the onion on small cubes and the bacon on small pieces.

After you add the baby spinach in a bowl, add a layer of chopped red onion and some vinegar. On top finish with small pieces of crispy bacon. Season with salt and pepper to taste.

As garnish you can use orange slices, grated orange peel, walnuts or something by your choice.
