Italian Picnic Sandwich

Ingredients
  

For the spread:

  • 3 oz soft cream cheese
  • 1/4 cup soft butter
  • 1/4 cup kalamata olives pitted and halved
  • 1/3 cup chopped roasted red bell pepper

For the sandwich:

  • 1 rectangular loaf ciabatta
  • 1/2 cup fresh basil
  • 4 large lettuce leaves
  • 1/4 pound thinly sliced deli smoked turkey
  • 1/4 pound thinly sliced deli baked ham
  • 1/4 pound thinly sliced sopressata Italian salami or salami
  • 6 3/4-oz slices provolone cheese

Instructions
 

Make the Spread:

  • First cut the bell pepper and the olives and set them aside.
    1/3 cup chopped roasted red bell pepper, 1/4 cup kalamata olives
  • Place the cream cheese and the butter into a hand blender and blend until creamy.

  • Then add the chopped roasted red bell pepper and olives and continue blending until you get a creamy spread.

Make the Sandwich :

  • Take the ciabatta bread and cut it into 8 pieces (You can also use a french bread for this recipe). Cut each piece in half as well. Onto each cut-side of bread spread a spoonful of the spread you have already prepared.

  • Layer bottom half of bread with basil, lettuce, turkey, ham, salami and yellow cheese.
    1/2 cup fresh basil, 4 large lettuce leaves, 1/4 pound thinly sliced deli smoked turkey, 1/4 pound thinly sliced deli baked ham, 1/4 pound thinly sliced sopressata Italian salami or salami, 6 3/4-oz slices provolone cheese

  • Cover with the top half of the bread and enjoy.
  • You may want to fold the meat slices while you are making the sandwich and you can also add more or less of some of the ingredients if you prefer.
