Ingredients
  

For the Coleslaw Salad:

  • 1/2 head green cabbage or 4 cups shredded
  • 1/2 head red cabbage or 4 cups shredded
  • 1 carrot (or 1 cup shredded)
  • ½ cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • ½ tsp dried dill
  • ½ tsp chili powder
  • 1 tsp kosher salt
  • Pinch of black pepper

For the Russian Dressing:

  • ¼ cup ketchup
  • ¼ cup shallot
  • ¼ cup dill pickles
  • ½ cup mayonnaise
  • a few dashes hot sauce to taste (optional)

For the sandwiches:

  • 2 cups Coleslaw Salad
  • ¼ cup Russian Dressing
  • 4 slices Swiss cheese
  • 4 pretzel rolls

Instructions
 

For the coleslaw salad:

  • First make the dressing for this salad by mixing in a small bowl, the mayonnaise, apple cider vinegar, maple syrup, dill, chili powder, and salt and pepper. Whisk until all the ingredients are incorporated.
    ½ cup mayonnaise, 2 tbsp apple cider vinegar, 2 tbsp maple syrup, ½ tsp dried dill, ½ tsp chili powder, 1 tsp kosher salt, Pinch of black pepper
  • Place your chopping board and prepare the green and red cabbage and the carrot. Add them all together in a big bowl and pour the dressing over. Stir with a spoon until all the ingredients are mixed and the salad is coated with the dressing and refrigerate for later.

For the Russian Dressing:

  • Chop the shallots and the dill pickles into small cubes and place them into a bowl. In the same bowl add the mayonnaise and the ketchup. You can also add some hot sauce if desired. Stir until this dressing is combined and leave it aside for later.

For the Coleslaw Swiss Cheese Melt:

  • Now that you have already prepared the Coleslaw Salad and the Russian Dressing you can make these cheese melts really easy.
  • Cut the pretzel buns in half and place the bottoms of the pretzel buns on a baking sheet. Add a slice of Swiss cheese on top. Place them in the oven and bake at 400°F (200°C) for about 4 to 5 minutes until the cheese is melted and the buns are lightly toasted.

  • On each piece add a spoon or two of the Coleslaw Salad and from the Russian dressing. Place on top the other half of the pretzel buns.
