The hummus sandwich is a great way to enjoy a picnic lunch or a quick snack. It's easy to make and can be customized to your taste.
– Lettuce – ¼ cucumber – 1 small tomato – ¼ small red onion – 1 cup hummus – ¼ cup jarred pickled carrots and cauliflower or any other vegetables – 4 slices of bread – Avocado – Feta – Fresh dill
Slice the cucumber and the tomato and put them on a paper towel to remove excess moisture. Repeat the same thing with the lettuce leaves. Toast the bread slices before you start layering the sandwich. Create the sandwich by putting lettuce leaves and cucumber circles over it. Using a spoon spread a good layer of hummus.
Add the previously chopped pickled vegetables, red onion, tomato, avocado and sprinkle some feta on top.
Spread hummus on the second slice of bread and place it on top with the hummus side down. – Repeat the same procedure for the other sandwich!
