Summer sausage rolls are a versatile and crowd-pleasing dish that can be enjoyed throughout the year.
– 2-3 chicken breasts (depending of the size) – 4 sundried tomatoes – Handful basil leaves – 1 garlic clove – 3 stripes bacon – Salt and black pepper to taste – 1 puff pastry (around 1 pound) – All purpose flour (for dusting) – 1 egg yolk – ¼ cup sesame seeds
Cut the chicken breasts into small cubes. While you are working on your cutting board you can also cut the tomatoes and basil into small pieces. Place the meat in a food processor or hand blender together with the garlic and process the meat until you get a paste. Add the bacon inside together with the tomatoes and the basil. Season with some salt and black pepper to taste and continue processing until everything is well combined.
Place the puff pastry on a floured surface and roll it a few times to make it thinner. Cut it in half lengthwise, place the filling in the middle and roll the pastry. Brush the opposite end of the pastry with egg yolk to stick it easier. Cut it into desired size pieces, in our case 12. Repeat the same process with the other half of the pastry.
Layer them in a previously prepared baking pan with baking paper. Brush the top with egg and sprinkle some sesame seeds on top. Bake the rolls in a preheated oven at 390°F (200°C) for around 20 minutes.
