Cut the edges of the beets on the cutting board with a sharp knife. Then slice the beets into very thin slices.
Place the slices into a medium bowl and add the olive oil and sea salt. Mix well and let them rest for 30 minutes. Preheat the oven to 300°F(150°C). Prepare a baking tray with aluminum foil. Place the beet pieces in the tray and cover them with aluminum foil.
Bake at 300°F(150°C) for 30 minutes, then check in every 10 minutes. Total baking time is about 1 hour or until the beets are curled and crispy.
