This dish is a combination of two classic picnic foods – baked beans and bacon – and is sure to be a hit at any outdoor gathering.
– 5 slices bacon – ½ onion – ¼ to ½ green bell pepper – 27 oz pork and beans – 2 tbsp ketchup – 2 tbsp molasses – ⅓ cup brown sugar – 2 tbsp cider vinegar – 1 tbsp mustard
Place your chopping board and cut the onion into small cubes. Cook the bacon half way through and keep the bacon fat in the skillet. Take the bacon out of the skillet, leave it to cool and cut it into smaller pieces. Leave it aside for later.
In the same skillet where you have cooked the bacon add the bell pepper and the onion. Cook on medium high for about five minute and stir from time to time. Add ketchup, molasses, brown sugar, cider vinegar and mustard. Cook for a couple more minutes and mix to combine.
Transfer it to a baking dish and add the pork and beans. Mix everything until well combined.
Lay the cut bacon on top. Cook in a preheated oven to 325°F (160°C) for 2 hours.
