Maple Bourbon Butter – 2 tbsp olive oil – 4 stripes bacon – 4 tbsp butter – 2 tbsp maple syrup – 2 tsp bourbon – Salt to taste Chipotle Mayo with Parmesan Cheese – 2 tbsp chives – 1 cup mayonnaise – 1 tsp lemon zest – 2 tbsp lemon juice – 2 tbsp chipotle pepper in adobo sauce – 6 tbsp parmesan cheese Spicy Corn with Cotija Cheese – 1 lime – 1 jalapeño pepper – 4 tbsp cilantro – 4 tbsp butter – Salt to taste – 6 tbsp cotija cheese – 4 tsp chili powder Blue Cheese Butter with Chives – 4 tbsp butter – 8 tbsp blue cheese – 8 chives
Maple Bourbon Butter Fry bacon until it gets golden and crispy. Let it chill then cut it into small cubes. Place the soft butter in a medium bowl, together with the maple syrup, bourbon and salt. Stir everything with a fork and add on the top of the hot corn. The butter will melt and will go inside the corn. Add some fried bacon on top.
Chipotle Mayo with Parmesan Cheese Chop the chives into small pieces. In a medium bowl add the mayonnaise, lemon zest, lemon juice, chipotle pepper and chopped chives. Stir until everything is well incorporated and top it at the already prepared corn. Add some grated parmesan cheese on top.
Spicy Corn with Cotija Cheese Cut the lime into 4 pieces and chop the cilantro and jalapeño. Brush the warm corn with butter, add some lime juice on top, salt to taste, chopped cilantro, hot pepper, add some crumbled cotija cheese on top and some chili powder to taste.
