Ingredients
  

  • 4-6 ears of corn

Maple Bourbon Butter

  • 2 tbsp olive oil
  • 4 stripes bacon
  • 4 tbsp butter
  • 2 tbsp maple syrup
  • 2 tsp bourbon
  • Salt to taste

Chipotle Mayo with Parmesan Cheese

  • 2 tbsp chives
  • 1 cup mayonnaise
  • 1 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp chipotle pepper in adobo sauce
  • 6 tbsp parmesan cheese

Spicy Corn with Cotija Cheese

  • 1 lime
  • 1 jalapeño pepper
  • 4 tbsp cilantro
  • 4 tbsp butter
  • Salt to taste
  • 6 tbsp cotija cheese
  • 4 tsp chili powder

Blue Cheese Butter with Chives

  • 4 tbsp butter
  • 8 tbsp blue cheese
  • 8 chives

Instructions
 

  • For this recipe the corn needs to be in husks to make it faster and easier. You can prepare them in two ways on a grill or on a grill pan.
    4-6 ears of corn
  • If you choose to cook them on a grill, turn the grill on a medium high heat and cook the corn with the cover closed for around 20-30 minutes until the corn gets soft. Make sure to turn the corn on every 5 minutes.
  • If you use the grill pan the procedure is the same. Place the corns in a previously heated pan prepared with olive oil, cover the pan with a lid if there is any or with aluminum foil. Turn them on every few minutes and cook for 30 minutes or until the corn gets soft.

Maple Bourbon Butter

  • Place a pan on a medium heat, add some olive oil and fry the bacon inside for a few minutes until it gets golden and crispy. Let the bacon chill for a few minutes then cut it into small cubes.
    2 tbsp olive oil, 4 stripes bacon
  • Place the soft butter in a medium bowl, together with the maple syrup, bourbon and salt. Stir everything with a fork and add on the top of the hot corn. The butter will melt and will go inside the corn. Add some fried bacon on top.
    4 tbsp butter, 2 tbsp maple syrup, 2 tsp bourbon, Salt to taste

Chipotle Mayo with Parmesan Cheese

  • Chop the chives into small pieces.
    2 tbsp chives
  • In a medium bowl add the mayonnaise, lemon zest, lemon juice, chipotle pepper and chopped chives. Stir until everything is well incorporated and top it at the already prepared corn. Add some grated parmesan cheese on top.
    1 cup mayonnaise, 1 tsp lemon zest, 2 tbsp lemon juice, 2 tbsp chipotle pepper in adobo sauce, 6 tbsp parmesan cheese

Spicy Corn with Cotija Cheese

  • Cut the lime into 4 pieces and chop the cilantro and jalapeño. Brush the warm corn with butter, add some lime juice on top, salt to taste, chopped cilantro, hot pepper, add some crumbled cotija cheese on top and some chili powder to taste.
    1 lime, 1 jalapeño pepper, 4 tbsp cilantro, Salt to taste, 6 tbsp cotija cheese, 4 tsp chili powder, 4 tbsp butter

Blue Cheese Butter with Chives

  • In a medium bowl place the butter and crumbled blue cheese. Mix everything with a spoon, place it on top of the corn and decorate with some chives on top.
    4 tbsp butter, 8 tbsp blue cheese, 8 chives
