BLT Bites

They're the perfect alternative to a sandwich that can sometimes be too bulky and messy to handle. Not only are BLT Bites visually appealing, but they're also incredibly easy to make.

Ingredients
  

  • ¼ small red onion
  • 1 tbsp vinegar
  • Kosher salt to taste
  • Black pepper to taste
  • 8 oz bacon
  • 12 oz cherry tomatoes
  • 1 tbsp olive oil
  • 1 small lettuce it works best if it’s Little Gem Lettuce
  • Blue cheese for topping

Instructions
 

  • Place the onion on the chopping board and chop it into small pieces.

  • In a small bowl mix together vinegar, salt, pepper and onion. Let it sit for a while and toss occasionally.

  • Put a rack on a baking sheet and layer the bacon. Cook in the oven for 30 minutes at 300°F (150°C) or until golden and crispy. Be careful towards the end, it burns very easily.
    8 oz bacon
  • Meanwhile cut the tomatoes into halves, add them in the onion mixture together with the olive oil. Stir everything with a spoon. Take a lettuce leaf and fill it with the mixture. Repeat the same procedure for all the lettuce leaves.
    12 oz cherry tomatoes, 1 tbsp olive oil, 1 small lettuce
  • Once the bacon is cooled down, dice it. Sprinkle the cooked bacon over the lettuce. Top with crumbled blue cheese.
    Blue cheese for topping
