In a pot over medium heat place the chicken meat, add some water and cook it for about 15 minutes. When it’s done take it out of the water, place it on the chopping board and tear it apart into small pieces.

While the meat is cooking you can cut the rest of the ingredients like the apples, celery, walnuts.
1 to 2 Granny Smith apples, 1 cup chopped celery, 1/2 cup chopped walnuts
In a medium bowl combine together the chicken, apples, dried cranberries, celery, walnuts, mayonnaise, yogurt, honey mustard, lemon juice, and salt. Stir all the ingredients until you get a nice mixture.

Make the sandwiches using cinnamon raisin bread. Spread 2-3 spoons of the chicken mixture onto the cinnamon raisin bread. You can add more or less depending on your taste. Add a lettuce leaf and place the top piece of cinnamon raisin bread. Repeat this procedure for the rest of the sandwiches.
