Ingredients
  

  • Lettuce
  • ¼ cucumber
  • 1 small tomato
  • ¼ small red onion
  • 1 cup hummus
  • ¼ cup jarred pickled carrots and cauliflower or any other vegetables
  • 4 slices of bread
  • Avocado
  • Feta
  • Fresh dill

Instructions
 

  • Slice the cucumber and the tomato and put them on a paper towel to remove excess moisture. Repeat the same thing with the lettuce leaves you are going to use in the sandwich.

  • Toast the bread slices before you start layering the sandwich. Create the sandwich by putting lettuce leaves and cucumber circles over it. Using a spoon spread a good layer of hummus.
