Instructions
Slice the cucumber and the tomato and put them on a paper towel to remove excess moisture. Repeat the same thing with the lettuce leaves you are going to use in the sandwich.
¼ cucumber, 1 small tomato, Lettuce
Toast the bread slices before you start layering the sandwich. Create the sandwich by putting lettuce leaves and cucumber circles over it. Using a spoon spread a good layer of hummus.
4 slices of bread, 1 cup hummus
Add the previously chopped pickled vegetables, red onion, tomato, avocado.
¼ small red onion, Avocado
Sprinkle some feta cheese on top.

Spread hummus on the second slice of bread and place it on top with the hummus side down.
