Bacon and Eggs Panini Breakfast Picnic Sandwich

Ingredients
  

  • 6 eggs
  • pinch kosher salt
  • pinch ground black pepper
  • 4 oz 1 cup grated cheese
  • 12 slices center cut bacon
  • 8 slices whole grain bread
  • 4 tbsp salted butter

Instructions
 

  • In a bowl place the eggs, salt and pepper and whisk together using a fork. Set the mixture aside for later. You can also use a hand blender to help you in this process.

  • In a pan over medium heat, cook the bacon until it gets golden and crispy. Remove it onto a plate with a paper towel to drain the excess of oils.

  • Let the pan cool for a minute and clean it off the bacon grease before pouring in the eggs.

  • Pour the egg mixture into the previously heated pan and stir for a few minutes until they’re cooked. Set the eggs aside to wait for the assembling process.

  • Lay the bread slices on the working surface and add a thin layer of butter on the top side of each slice.

  • Take one piece of bread, Place it in your previously heated sandwich toaster with the buttered side down. With a spoon add some of the egg mixture, then a few slices of bacon and some of the previously grated cheese.

  • At the end, add another piece of bread on the top with the buttered side up. In this way the butter will melt in the bread and it will give a special flavor.

  • Close the toaster and cook until the bread becomes crispy and the cheese is melted.
