Instructions
Boil the cauliflower for a couple of minutes in salted water until it gets soft. Drain the water, let it cool and cut it into small florets.

Put the florets into the food processor and pulse into small crumbs. Transfer the cauliflower crumbs into a large microwave-safe bowl and microwave for 3 minutes. Remove and stir.
Repeat this procedure until the crumbs get totally dry
In the same bowl add the parmesan, egg and seasonings into the cauliflower and mix it well until everything is combined and you have a smooth paste.
1 cup parmesan cheese, 1 egg, 1 teaspoon Italian herb seasoning, Salt and black pepper to taste
Divide the mixture into 8 portions and transfer to a baking sheet in a previously prepared baking pan. Shape each piece into a square slice about ½ inch thick.
Bake in a preheated oven to 450°F (230°C) for 15 to 18 minutes or until golden brown.
Let them cool and assemble the sandwiches. Put one cauliflower slice, add the cheddar on top and add the second slice.
4 slices Cheddar cheese
Repeat with the rest of the cauliflower slices.
Broil the sandwiches in the oven for 5 to 10 minutes if you want completely melted cheddar.
