Pour olive oil in a medium sized pan and cook the chicken on medium heat. Cook on both sides for about 15 minutes until golden.

Toast the walnuts in the oven or in a pan and chop them. You can also cut the apple and set it aside. Place the bread in a toast press and leave it for a few minutes until it’s nice and brown.
2 oz ½ cup toasted walnuts (chopped or whole), 1 red apple
In a bowl mix together the cream cheese, blue cheese, apples, walnuts and the lemon juice. Stir them together and spread on a slice of bread.
3.2 oz ½ cup spreadable cream cheese, 3 oz ½ cup crumbled blue cheese, 1 red apple, 1 tbsp lemon juice, 2 oz ½ cup toasted walnuts (chopped or whole)
When the chicken is cool, cut it and top the sandwich with it. Sprinkle some tarragon on top.
