The chicken caprese panini classic is an Italian-style sandwich is made with grilled chicken, fresh mozzarella, and ripe tomatoes, all sandwiched between two slices of toasted bread.

Instructions
Make the basil oil:
Place all the ingredients for the basil oil in a hand blender and process until everything gets nice and smooth.
½ cup olive oil, ¼ cup fresh basil, A few garlic cloves, ½ tsp red pepper Flakes, ½ tsp black pepper, ½ tsp salt
Chicken tenderloins:
Prepare the tenderloins using a meat mallet until they get the wanted thickness. Place the meat in a bowl, cover it with the previously made basil oil, stir with a spoon so the oil gets everywhere around the meat and leave it in a fridge to marinate for 30 minutes.

Take the chicken meat out of the fridge and cook each piece for a few minutes on a previously heated panini press. The meat is done when it has grill marks over it and has some brown color.
Heat the balsamic vinegar and cook for a few minutes until it starts to get thicker.

Assemble the sandwich:
Place a slice of bread, add the cooked chicken meat, a few thin circle slices of previously cut tomato, and a few thin slices of mozzarella. Cover with another bread piece on top of the sandwich.

Brush the top and the bottom of the sandwich with the basil oil, place it in a preheated panini press and cook for a few minutes until the bread gets golden brown and the cheese is melted.
Repeat the same procedure for the rest of the sandwiches.
Drizzle on top with the previously prepared balsamic vinegar.
