Put a wire rack on a baking sheet and lay the bacon in a single layer on the rack. Bake it in a preheated oven at 400°F (200°C) for about 30 minutes. Rotate the bacon halfway through until the bacon is golden.

While the bacon is in the oven make the maple mixture by mixing together maple syrup, brown sugar and cayenne pepper.

Remove the tray from the oven and brush the bacon with the maple mixture.

Put it back in the oven and cook for about 3 more minutes, until the bacon is crispy.

Let it cool before you assemble the sandwich.

Meanwhile in a small bowl mix together the mayonnaise, chili and the sweet paprika, and season with salt and pepper to taste if you like.

Now it’s time to assemble the sandwich. Toast the bread and slice the tomato.

Spread the mayonnaise sauce on the bread and add lettuce, tomato slices and bacon.
