Peel the banana and mash it with a fork in a medium bowl. Add the almond butter and warmed honey. Stir until combined.
1 ripe banana, 2 tbsp almond butter, 2 tsp honey
Prepare a bigger dish with parchment paper and place 12 crackers. Spread 1 or 2 teaspoons of the banana mixture on each cracker. Top with remaining crackers and freeze until firm.

Pour one cup of water in a pot and bring it to boil. Place a small bowl on top and add the chocolate inside. Allow the steam to heat the bowl and melt the chocolate. Stir occasionally until the chocolate is melted. Stir in coconut oil until smooth. Remove from the heat.

When the crackers are firm, take one at a time and dip half of the sandwich in melted chocolate. Then place it back in the dish. Let it chill.
