Turkey Sliders with Sweet Potatoes

Ingredients
  

  • 2 big sweet potatoes
  • 4 strips bacon
  • 1 pound ground turkey
  • ½ cup parmesan
  • 2 eggs
  • 4 tbsp fresh cilantro
  • 1 tsp dried basil
  • 1 tbsp soy sauce
  • ½ tsp ground cumin
  • ½ cups breadcrumbs
  • 1 cup cheddar cheese
  • 9 tsp honey dijon mustard

Instructions
 

  • Peel the sweet potatoes if you want, you can just wash them. Cut them into circle slices and place them in a previously prepared baking pan with baking paper. Bake them in a preheated oven at 425°F (220°C) for 30-35 minutes until they get soft.

  • Place the chopping board and cut the bacon into small pieces, chop the cilantro, shred the parmesan and cheddar cheese and set all these ingredients aside for later.

  • In a pan on a medium heat place the chopped bacon, Fry for a few minutes until it gets golden and crispy and take it out of the pan.
  • Place the bacon in a big bowl together with the ground turkey. Add in the parmesan, eggs, fresh cilantro, dried basil, soy sauce, ground cumin, breadcrumbs and stir everything using your hand. Work with your hand until everything is well combined.

  • Place it in a fridge for at least 30 minutes before you continue with the recipe. You can wrap the bowl with plastic wrap as well.
  • After 30 minutes, take the meat mixture out of the fridge and start making small slider-sized patties. Repeat the same procedure for the rest of the meat.
  • Fry them in a pan for a few minutes on one side. Flip them on the other side and cook until they are done on both sides and in the middle as well. Before you take them out add some of the grated cheddar and cook for a few more minutes until the cheddar has melted.
  • Start layering the sliders by putting one piece of the sweet potatoes on the bottom, then add 1 tsp of honey dijon mustard, a piece of meat and cover with another slice of sweet potato. Place a toothpick in the middle or any fancy bamboo skewers for sandwiches to connect everything together. If you want to give some color to the sliders you can place some fresh parsley between the layers and some vegetables.

  • Repeat the same procedure for the rest of the meat and the sweet potato slices.
