In a food processor place the fresh peppermint leaves, fresh basil leaves, almonds, garlic, grated hard cheese, olive oil, pinch of salt and ground black pepper. Process until smooth adding water until you get the desired consistency.
1/2 cup fresh peppermint leaves, 1/2 cup fresh basil leaves, 1 clove garlic, 1/2 oz almonds, 1 tbsp hard cheese, Salt and black pepper to taste, 2 tbsp olive oil, 2-3 tbsp water
Save for about 4 tbsp and reserve the rest of the dressing for another use.
Assembling the watermelon skewers:
On the cutting board, cut the watermelon and feta cheese into cubes.
1/4 watermelon, 7 oz feta cheese
Take a skewer and alternately arrange cubes of watermelon and feta cheese. Repeat with all the skewers.
10 skewers
On a serving plate, place the watermelon skewers and top them with a previously made pesto dressing.
4 tbsp mint pesto dressing
Decorate with fresh peppermint and basil leaves.
